

It’s one of my 2018 goals to begin cooking at home regularly. It took me long enough to start, but this month I’ve finally been holding myself to it. In addition to preparing food at home, I’ve challenged myself to begin working with ingredients that are out of the norm for me. I’ve never had cauliflower outside of a bag of mixed veggies, so I grabbed a head at the store and decided to browse Pinterest for some good recipes.
I’ve learned with cooking that it’s hard to go wrong when preparing a casserole, so it’s always my go-to. Unfortunately, I wasn’t able to find any cauliflower casserole recipes I was a fan of. After searching for 15 minutes, I decided to take matters into my own hands…..and I’m so happy I did!
I’m super proud of this Loaded Cauliflower Casserole recipe I came up with. (I may or may not have made this dish 3 times in two weeks already.) The casserole is great as a side, but filling enough to be a main course as well. Without further ado, here’s how I make my casserole!
Cream Cheese (8oz)
Heavy Whipping Cream (1/2 cup)
Broccoli (12 oz)
Cauliflower (1 Head)
Turkey Bacon (5 Strips)
Shredded Mild Cheddar Cheese (4 oz)
Panko Bread Crumbs
Preheat oven to 350 degrees. Steam the cauliflower and broccoli until tender and set in aside. Cook the bacon, then cut it into slices 1/2 inch in width. In a large bowl, mix together the cream cheese and half of the shredded cheese. Add the bacon and stir thoroughly. Gradually mix in 1/2 cup heavy whipping cream. (I like my casserole to be creamy. If you prefer yours to be less creamy, use about 1/4 or none at all.) When the mixture is nice and creamy, mix in all the cauliflower and broccoli. Of course, season the mixture as desired. Finally, spread the mixture into a 13×9″ pan and spread it evenly. Sprinkle the remaining shredded cheese on top, then finish it off with a thin layer of bread crumbs. Cook in the oven for 25 minutes.
This meal is super basic but delicious! I’ve already tried adding sautéed mushrooms (delish) and may try adding chicken in the future. I’m so excited to try new recipes and share them with you all!
